Peanut Butter Blossoms



Peanut Butter Blossoms are probably my new favorite cookie.. yes maybe even more than chocolate chip! I've had such a hard time finding a good chocolate chip recipe that works every time because we live at such a high altitude. I always end up with flat pancake chocolate chip cookies! But these peanut butter blossom cookies have turned out perfect every time I've made them, making them one of my new go-to cookie recipes. 

Ingredients:

1 Cup Creamy Peanut Butter
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar
1/2 Cup Butter, Softened
1 Egg
1 1/2 Cups All Purpose Flour
2 Teaspoons Vanilla
2 Teaspoons Baking Soda
1/4 Teaspoon Salt
Chocolate Kisses (I used dark chocolate ones)
Additional Granulated Sugar (about 1/3 cup)


Directions:

Preheat oven to 375 degrees F. Meanwhile, using an electric mixer combine 1/2 cup sugar, brown sugar, butter and peanut butter on medium until well mixed.
Add egg, vanilla, and salt to the peanut butter mixture continuing to mix on medium speed. Add flour and baking soda and switch speed to low.
Form dough into 1 inch balls and roll in sugar. Space around 2 inches apart on a greased cookie sheet. Bake 9-10 minutes.
Immediately after moving from oven press a chocolate kiss into the center of each cookie. Then carefully move cookies to a cooling rack. Allow to cool completely before wrapping up or serving.

Project 52 - Weeks 1 & 2

Hey there! I can't believe that January is almost over already! I feel like it was just barely Christmas like last week!

I am beyond thrilled to be a part of the 2017 Project Life Creative Team, and one of my goals this year is to share with you all how I use the Project Life App to record our memories. The Project Life App is seriously such an amazing tool! I love scrap-booking, but I find the task of printing pictures, gluing, etc. to be kind of daunting and not to mention time consuming! But the app is such an awesome alternative, I'm able to put together layouts in minutes and save them conveniently on my phone throughout the year. I just finished up our pages from 2016 and I am so excited to get them printed in a photo book!

You can print your pages right from the app, and slip them into your Project Life scrapbook!

2017 Reading Challenge!

This year I am super excited to be taking part in the Goodreads 2017 Reading Challenge! For all of you avid readers out there you should check out the Goodreads app if you haven't already. It's available in the app store. It is a super great way to keep track of all the books you have read, are currently reading, and want to read in the future. Plus there is a fun social media side to it where you can see what all of your friends are reading as well! I love it!

I chose to read 24 books in 2017 as my challenge. Now I know some of you are probably thinking that is not very many, and some are probably thinking that its a ton! Most people I've seen choose 52 books in a year (1 book a week). I figured I would start a little smaller since we are expecting a baby this year and I don't know how much free time I'm going to have for reading. If I end up reading 24 books by July then next year I'll shoot for 52 books!

Alright, I'm going to share a list of a few books I have in mind to read this year..
So far I've already read Cinder by Marissa Meyer, and I'm currently reading Scarlet by Marissa Meyer, as well as The Fruitful Wife by Hayley DiMarco.

This list is bound to change throughout the year, these are just a few of the books I have in mind. I'm super excited to read a ton this year! Now that I'm graduated from college I feel like I need to always be reading a book so my brain doesn't melt...

Plus come April I'll be a stay at home mom with hopefully some more spare time on my hands for reading, and changing diapers of course!

I hope this inspires you all to pick up a book or two this month or even this year! I'll keep you updated on what I'm reading as the year progresses as well.
